Really Easy Recipe for Healthy Peanut Butter Cookies

Healthy Peanut Butter Cookieshealthy peanut butter cookies

This is such a great recipe – you will need to take a little time to rest the batter, but the end result is well worth the wait.

Healthy and delicious, once you’ve tried these cookies, they’ll become a firm favorite!

These quantities should make between 15 – 20 cookies.

Ingredients

  • 225g chunky peanut butter
  • 2 beaten eggs or 115 egg substitute
  • 115ml peanut oil
  • 70g brown sugar
  • 70g granulated sugar (If you prefer, you can use all brown sugar or all granulated sugar, but I find these quantities give the best results)
  • 170g oat bran
  • 140g self-raising flour
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder

Method

  1. Mix together the oil, the eggs and the peanut butter in a large bowl until well blended.
  2. Gradually add the sugar(s) and then mix in the dry ingredients.  As this is quite a firm dough, you may find it easier to use your hands for this, rather than a spoon.  Or you can use a food mixer.
  3. Cover the bowl with plastic wrap and put into the refrigerator.  Chill the cookie mix for at least 3 hours, but preferably overnight.
  4. At the end of the chilling time, preheat your oven to 180ºC/350ºF.
  5. Shape the cookie mix into golf size balls and place them on a non-stick baking try (or on non-stick baking paper).  Press them flat with a fork to give a decorative pattern on the top, but take care not to squash them too flat.
  6. Bake for around 15 minutes or until brown around the edges.
  7. Remove the cookies from the oven and allow to cook before enjoying with an ice-cold glass of milk!
